Minimum event price is $500.00 this includes the Lang deluxe smoker grill to your site within 20 mile radius of Fredonia Wi, this is for a lunch or dinner, but does not include a long, full day of smoking, $750.00 minimum for an all day event [ mileage fee will apply for long haul ] charcoal and hardwood fuels, basic seasonings and "pit" operator - actual food costs not included in this price.

Discounts available to some organizations and all Military related gatherings.

 I do supply quality disposable plates, bowls if needed, flatware and napkins with meal.

 As ALL meat prices start to rise, and forecasted trend looks like they will continue to rise dramatically - prices are more so subject to change than ever before. From fuel costs to droughts  - prices from my suppliers and therefore mine are expected to fluctuate dramatically.

Due to rising product costs, $17.00 is now the average starting point when trying to estimate cost - 2 meats and 2 sides, quality paper plates, disposable forks and napkins  - based on 75 people or more, smaller groups will cost more per plate, and can vary greatly depending on number and type of main and side dishes, number of guests, size and ages of guests etc.

I have yet to do an event without having leftovers - I prepare on the heavy side no matter the crowd, and never stop anyone from enjoying seconds or thirds unless the host says otherwise in advance. [ If the host specifies serving size, leftovers or seconds may not be available.] That being said, I cannot feed a construction crew or Football Team for the same price as the same amount of Red Hat Ladies!!Every meal will be quoted separately

 

BBQ Chicken varies based on leg/wing combo vs breast vs whole or half bird. Leg / thigh falls into "average" price, half / whole incur higher cost to both of us!

Buns are basic white buns as not to cover the flavor of the meat, Sheboygan hard rolls, dinner rolls, flat bread, tortilla shells etc. available upon request for an additional fee.

Hot dogs can always be a hit for the young and old! I can simply roll a few dozen, or set up an entire "build your own"  condiment area.

Deserts can be provided - depending on size of group and desert requested.

Have never attempted smoking or grilling tofu...not so sure I want to...Your vegan friends may have to stick to the salads....but most of my sides and salads contain bacon and butter!

Basic sides of potato salad and noodle salads cost around $30.00 for a half pan - about 5 pounds - Dependent on crowd size and salad desired - a crab salad clearly costs more to prepare than a veggie noodle salad etc.

Speared fruits, vegetables and/ or cheese are dependent on seasonal market prices- very labor intensive but great as  hors d'oeuvres or a side dish.

 BBQ sauce's available:

 

Sweet BBQ - not that Ray guy's, but somewhat along that line

Tangy - a red base with more vinegar than the sweet, and a few more spices, but not hot

Roxy Sauce - lightly sweet, tangy mustard based 

Tropical mango - sweet fruity mustard BBQ sauce

Alabama White - mayo based with both a horseradish and cayenne kick

Georgia Boy -  thin, seasoned vinegar sauce

All available in standard and HOT versions

We also now have our own line of BBQ dry rubs! One we use on pork and chicken, one for beef.

Both bottled and available for purchase for home use or gifts!  

 

 

 

Market price will determine some menu's - I can quote just about any menu you can dream up.

 

Additional deep frying with grilling / smoking will automatically cost more for time, propane and oil - your choice of oil can greatly affect my cost.  Corn oil is good and reasonably priced, olive oil is extremely expensive, but healthier - there are many choices between available. Lets not forget peanut allergies etc.

Sides such as cowboy baked beans, smoked Shells-n-Cheese, coleslaw, potato salads and noodle/veggie salads and making of your recipes is always an option.

You must supply a water source within reasonable walking distance for cleaning and emergency - I do carry a limited supply in trailer, but often need refills!

You must supply disposal of your party misc and cooking debris / bones / packaging etc. I carry my own trash can, but will leave bag[s] behind.
